Astrid Muschalla (formerly Strader), P.H.Ec., is the Director of Oasis Institute for Healthy Living Inc. (OIHL). The primary focus of this company is to provide industry and consumers, information and various services on food & nutrition, healthy cooking and eating, environmental stewardship, and wellness for a healthy lifestyle. It’s the holistic approach that sets Oasis Institute for Healthy Living apart by emphasizing overall well-being of people and the environment.
Astrid is a Professional Home Economist and Red Seal Cook with over 20 years experience in the food industry as well as in education. She is also a certified Horticulturist and has earned a reputation for understanding the food distribution chain, from grower/producer to manufacturer, to retailer or foodservice establishment, and ultimately, to the consumer. This knowledgeable perspective helps tailor the education and consulting services to meet clients various needs, culminating in lasting change.
Much success has resulted from published applied research in The Journal of the Canadian Dietetic Association demonstrating the success of an educational model to change the way people eat – via cooks and Chefs. Since then, OIHL has been involved with numerous curriculum development projects for colleges, high schools, and various public agencies which promote healthy living.
Astrid lives what she teaches. She says, these four truths say it all:
- It has to be simple or people won’t do it
- Nutrition has to taste good
- Healthy eating is not about dieting
- Feed the soil, not the plant.
Many magazines and food columnists have published Astrid's original recipes. She's made numerous TV appearances and is the host of TV cooking show "Let's Cook Healthy". Astrid recently completed a 5-year term on the accreditation board for the Canadian Society of Nutrition Management. She teaches at both Centennial and Algonquin Colleges.
